Yep. Now my issue is a configuration where I think I've got it to run the extruder at 240C for ABS, but it drops the setpoint down to 200C when I start printing.As you might imagine, the filament doesn't flow well when it's not melting.

That sounds like a slicer configuration option. There's usually separate options for first (to improve sticking) and subsequent layer (better definition at lower temps, within reason) temperatures. You might need to turn on advanced options if your slicer has them
